Plum Crumble Baked Oatmeal

Having already made a Plum, lemon and ginger crumble and a Plum apple crumble earlier in the week I decided to make a much more simple plum crumble. With just a little extra crunch from some nuts.



Yes, I ate that burnt hazelnut whilst taking my pictures. Because it was irritating me and ruining my photographs. 

Plum Crumble Baked Oatmeal


Ingredients:

Filling:

2-3 Ripe Plums
1 Tsp maple syrup or sweetener of choice

Crumble Topping:

1/2 Cup/45g Rolled Oats
2 Tsp Maple syrup or honey
2-3 TBSP Milk of choice
Pinch of Salt
1/4 Cup Hazelnuts, roughly chopped

Method:

1. Preheat the oven to 350F/180C/Gas Mark 4.
2. Cut the plums into sixths or quarters, the riper the fruit the bigger you want the chunks so they don't cook down to complete mush. Pour into your dish or a bowl and mix with the sweetener, if the latter, pour into your dish and set aside.
3. Mix the oats and salt . Pour in the maple syrup or honey, and add in 2 tbsps of milk. Mix around till it all starts to come together and clump into clusters. Add in any extra if you need it, but you shouldn't really. Fold in the hazelnuts.
4. Lightly pack the crumble on top of the fruit and bake for 17-20 minutes or till the oats are golden and crisp.
