Plum White Chocolate Baked Oatmeal

Okay, so white chocolate is not nutrionaly sound. So what. It tastes good. And I don't have it THAT often. So I let it go. Nobody start singing. Please.



I know it sounds like a weird combo but I was inspired by a cookie recipe. That said it was actually a white chocolate chip cookie, dipped in white chocolate with only a single bit of dried plum under the coating. But I decided that it was worth a try. And God was it.


Plum White Chocolate Baked Oatmeal


This baked oatmeal was fantastic. As always not tooting my horn. But it was. Fruity and moist the plums actually add an extra level of gooey, jamminess to the already melty gloriousness of the chocolate.

I used 'Green and Black' white chocolate. Which has a serving size of 6 pieces or 20g but use as much chocolate as you wish. In chopped up bar form or chips. What ever you've got.



Ingredients:

1/2 Cup/45g Rolled Oats
1/4 Tsp Baking powder
Pinch of Salt
1/2 Tsp Vanilla Extract
1 Tsp Maple syrup or sweetener (Optional, but it takes away bitterness from the cocoa)
2 TBSP Cocoa powder
1/4 Cup/60ml Milk of choice
2 Ripe Plums

20g White chocolate

Optional: 2 TBSP Flaxseed

Method:

1. Preheat the oven to 350F/180C/Gas Mark 4. Mix the oats, baking powder, salt, cocoa powder and optional flaxseed till combined.
2. Mix in the vanilla and sweetener, add the milk in TBSP at a time till the mix is wet but not sloppy.
3. Chop up half the chocolate into chip size and the plums into chunks and mix in. Pour into a prepared dish and bake for 17-20 minutes. Till set solid, it will probably be bubbling and the chocolate melted.
4. Melt the remaining chocolate 30 seconds at a time in the microwave till smooth and spread over the top of the baked oatmeal. Enjoy.
