I'm gonna cook Thanksgiving dinner. Granted it will be two days late, as I will be at college on the day. But my family will feast on turkey and all the 'American' trimmings on the 29th. And one of the desserts, will be sweet potato brownies. The other, semi-raw pecan pie. Both from Deliciously Ella. I can't wait to try them both out. Yes, I made this dish without having tried actual sweet potato brownies. But I'm a British girl making breakfast for holidays my people don't celebrate. Doing it happily of course. I'm a big lover of American culture, in a few years I wish to part take in 'Camp America' and if I get into my top choice of university, hope to study film abroad in one of the many American universities that are a part of the programme. As we all know, the USA, Hollywood to be exact, reigns supreme in todays cinema.
Back to food...
Last year my family and I went to London, to an American bakery, one of mine and my mums favourites, Outsider Tart for Thanksgiving. It was fantastic. But expensive. So this year I decided I needed a challenge. And to eat cornbread again. So I'm gonna give it a whack. I plan to save up my money next year to treat my mother to a real dinner next year.
This breakfast was dense, and rich and unbelievably filling. As well as satisfying. I topped it with crunchy peanut butter. I'd recommend it. Or swirling it in before baking. Anything for more indulgence in the morning.
Sweet Potato Brownie Baked Oatmeal
Tastes like dessert. But has hidden goodness. Delicious and nutritious.
Ingredients:
1/2 Cup/45g Rolled Oats, 1 TBSP ground to a flour
Pinch of Salt
1/4 Tsp Baking Powder
2 TBSP Cocoa Powder
1/2 Vanilla Extract
1/3 Cup Milk of choice
1/3 Cup Mashed sweet potato
1-2 Tsp Maple syrup or sweetener of choice
Optional: 2 TBSP Flaxseed
Handful of chocolate chips, I used dark
Method:
1. Preheat the oven to 350F/180C/Gas Mark. Grease a ramekin or dish.
2. Mix the oats, salt, baking powder and cocoa (And flax) till well combined. Add the vanilla and sweet potato, mix well. Add the milk TBSP at a time at a time till the oats are wet but not sloppy. It should be thick, like brownies batter. Fold in the chocolate chips.
3. Pour into your prepared dish and bake for 25-35 minutes. Depending on how cooked you want it. Enjoy!
