Almond and Orange Baked Oatmeal with Honeyed Figs

 
Inspired by the gorgeous Nigella Lawson this is a great way to have figs when their not in season.


Serve with some form of yogurt/cream or ice cream. I of course went with Greek sweetener with a little extra honey.

 
Making the figs is long winded but it takes about the same time as the oatmeal takes to bake, when its down poke some holes into the top to help the syrup soak on in.

 

Almond & Orange Baked Oatmeal with Honeyed Figs


Ingredients:

Figs:
Juice and 1 strip of zest of an Orange
2-3 TBSP Honey
Pinch of Cardamom or 1 pod crushed
4-5 Dried Figs

Oatmeal:
1/2 Cup/45g Rolled Oats
1 TBSP Ground Almonds
1/4 Tsp Baking Powder
Pinch of Salt
1/4-1/2Tsp Orange Zest
1/3 Cup/80ml Milk of Choice
1 Tsp Honey

Method:

1. Preheat the oven to 350F/180C/Gas Mark 4. Grease a ramekin or dish.
2. Mix all the dry oatmeal ingredients and zest, add the honey and then the milk bit by bit till the oats are wet but not sloppy. Bake for 17-20 minutes. Till golden and set. Whilst it cooks, cook the figs.
3. Heat the juice, zest, honey and cardamom in a saucepan for about 5-10 minutes to infuse. Add the figs and cook for another 5-10 minutes till soft. Take the figs back out and heat juice for a further 1-2 minutes to a syrup. When the oatmeal is down place the figs on top and pour over the syrup. Enjoy!
