Apple, Cherry and Pear Compote Baked Oatmeal

I made a stove top oatmeal with this compote last year, this year I used it as a base for a super moist and fruity baked oatmeal.

 Apple, Cherry and Pear Compote Baked Oatmeal

Ingredients:

1/2 Cup/45g Rolled Oats
1/4 Tsp Baking Powder
Pinch of Salt
1/2 Tsp Vanilla Extract
1 Apple
1 Pear
Handful of Dried Cherries
1/2 Cup Applesauce
2-3 Tsp Maple syrup or sweetener of your choice
1/4 Cup Milk of Choice

Method:

1. Preheat the oven to 350F/180C/Gas Mark 4. Grease a ramekin or dish.
2. Put the apple, pear, applesauce and 1 Tsp sweetener into a saucepan. Heat, covered on a medium heat until the fruit is soft, stirring regularly. Add the cherries and cook for another minute. Set aside.
3. Mix the dry ingredients. Add the vanilla and sweetener, and about 1/3 of the fruit. Mix. Add more of the fruit if the batter can take it. You don't want tons of fruit in ratio to the oats as the batter won't bake. Add milk if needed to get the oats to a wet but not sloppy consistency. Pour into you dish.
4. Bake for 17-20 minutes or till set and firm. I inverted mine into a bowl, topped with yogurt, the extra fruit and nuts. Enjoy!
