Date and Walnut Cake Baked Oatmeal with Date Frosting

I'm obsessed with dates. I just love them.
 

Date and Walnut Cake Baked Oatmeal, with Date Frosting

Ingredients:

1/2 Cup/45g Rolled Oats
1/8 Tsp Baking Soda
Pinch of Salt
1/8 Tsp Lemon Zest (Optional)
1-2 Tsp Maple syrup or sweetener of choice
4 Gooey Medjool Dates
2-3 TBSP Walnuts, roughly chopped
1/3 Cup Milk of Choice
2 TBSP Applesauce (Optional)
 
Optional: 1 TBSP Flaxseed
 
Date Frosting:
2 Gooey Medjool Dates
1-2 TBSP Milk of Choice
1-2 TBSP Plain yogurt, I use Greek 0%
 

Method:

1. Preheat the oven to 350F/180C/Gas Mark 4. Grease a ramekin or dish.
2. Soak the dates with the lemon zest and hot water for at least 10 minutes. Drain and remove the caps and stones.
3. Mix the dry ingredients. Blend two of the dates with the applesauce and 1-2 TBSP of milk or just the milk. Mix into the dry. Chop up the other two dates and mix in with the walnuts. Add more milk to a wet but not sloppy consistency. Bake for 17-20 minutes or till firm and set. Let cool for a minute.
4. Blend the dates with some milk till as smooth as you can get it but still thick and sticky. Whip in 1 TBSP of the yogurt, if its at a consistency and taste you like don't add any more yogurt. Spread on top of your baked oatmeal, finish with a walnut. Enjoy!
