Pumpkin Banana Nut Baked Oatmeal




Pumpkin Banana Nut Baked Oatmeal

Ingredients:

1/2 Cup/45g Rolled Oats
1/4 Tsp Baking Powder
1/8 Tsp Baking Powder
Pinch of Salt
1/2 Tsp Vanilla Extract
1/3 Cup/Can Pumpkin Puree (150g)
1 Ripe Banana, 1 half mashed/1 half sliced
2 TBSP Walnuts, roughly chopped
1-2 Tsp Maple Syrup or sweetener of choice
1/4 Tsp Cinnamon
1/8 Tsp Ginger
1/3 Cup/80ml Milk of Choice

Method:

1. Preheat the oven to 350F/180C/Gas Mark 4. Grease a ramekin or dish.
2. Mix the dry oat ingredients. Mix in the pumpkin vanilla, and sweetener, half the walnuts. Add the milk if the oats aren't wet enough, or the batter is too thick like paste.
3. Pour half your batter into your dish, layer in half the sliced banana, pour on the rest of the oats, lay on the remaining banana and walnuts. Bake for 17-20 minutes till risen and golden. Enjoy!
