Bounty Trifle Baked Oatmeal
Ingredients:
1/2 Cup/45g Rolled Oats
1/4 Tsp Baking Powder
Pinch of Salt
2 TBSP Cocoa Powder
1/4 Ripe Avocado
30g Chocolate, I use dark
1/3 Cup/80ml Milk of Choice
1/2 Tsp Vanilla Extract
Coconut Yogurt, I use COYO
1-2 TBSP Dessicated Coconut, toasted if desired (I toasted half)
Chocolate Chips
Method:
1. Preheat the oven to 350F/180C/Gas Mark 4. Grease a ramekin or dish.
2. Mash the avocado, melt the chocolate. Mix the dry oat ingredients. Add the avocado and chocolate. Mix. Add the milk bit by bit till the oats are wet but not sloppy.
3. Bake for 17-20 minutes or till firm and set. Let cool for a minute, invert and break up to chunks, let cool another 4-5 minutes.
4. Layer the baked oatmeal, chocolate sauce, yougurt and coconut and chocolate chips. If your 'sponge' is still warm squish some chocolate chips inside so they melt. Enjoy!
