Golden Loaf Baked Oatmeal

 Golden Loaf Baked Oatmeal

 Ingredients:

1/2 Cup/45g Rolled Oats
20g Polenta/Cornmeal
1/4 Tsp Baking Powder
1/8 Tsp Baking Soda
Pinch Cardamon
1/4 Tsp Ginger
1/8 Tsp Nutmeg
Pinch od Salt
1/2 Tsp Vanilla
1/3 Cup/Can Pumpkin Puree (150g)
1-2 Tsp Maple Syrup or sweetener of choice
1 Tsp Ghee/butter/butter alternative or some butter extract
Handful of Dried Cranberries
1 TBSP Walnuts, roughly chopped
1/4 Cup Milk of choice

Method:

1. Preheat the oven to 350F/180C/Gas Mark 4. Grease a ramekin or dish.
2. Mix all the dry ingredients. Add the rest of the ingredients, adding the milk bit by bit if the oats need it.
3. Bake for 20-25 minutes till golden and cooked through. Spread with whatever you desire or eat plain. Enjoy!
