We had this 'Passion Cake' at work. It looked gorgeous. It smelt even better.
But I resisted.
And I vowed to taste it. In Baked Oatmeal form.
Passion Cake Baked Oatmeal
Ingredients:
1/2 Cup/45g Rolled Oats1/4 Tsp Baking Powder
Pinch of Salt
1/4 Cup of Pineapple, finely chopped or slightly crushed in a blender
1 Carrot, grated
1/2 Tsp Vanilla Extract
1-2 Tsp Maple Syrup or sweetener of choice
1/3 Cup/80ml Milk of Choice
Frosting:
1/2 Cup Plain yogurt, I use Greek 0%
1/2 Tsp Maple syrup or sweetener of choice
3 Passion fruits, strain the seeds to get the juice, eat the seeds
Peanut, finely chopped
Method:
1. Preheat the oven to 350F/180C/Gas Mark 4. Grease a ramekin or dish.2. Mix all the dry ingredients. Add the Pineapple, carrots, vanilla, maple syrup and then the milk bit by bit till the oats are wet but not sloppy. Pour into you dish. Bake for 17-20 minutes till lightly golden and firm. Let cool for a minute or two.
3. Whip the yogurt, and maple syrup, adding the passion fruit juice bit by bit. Don't add to much that it will get sloppy. Taste with each addition. Roast the peanuts for a few minutes at the same temperature. When done spread the frosting just on top or all over your baked oatmeal. Top with the peanuts. Enjoy!
