I saw little date ginger cakes in Waitrose and I was like "Oatmeal. That can be oatmeal!"
Of course these lovely little cakes were full of 'enriched' flour, inverted sugar syrup, etc, etc. May taste good but it wouldn't make me feel good.
Sticky Date & Ginger Baked Oatmeal
Ingredients:
1/2 Cup/45g Rolled Oats
1/4 Tsp Baking Powder
Pinch of Salt
1/4 Tsp Ginger
1/2 Tsp Vanilla Extract
2-3 TBSP Applesauce
4 Gooey Medjool Dates
1/3 Cup/80ml Milk of Choice
Optional: 1 TBSP Flaxseed
Frosting:
3-4 TBSP Cream Cheese, I used 3 Dairylea Triangles
1-2 Tsp Maple syrup or sweetener of choice
1/4 Tsp Vanilla Extract
Method:
1. Preheat the oven to 350F/180C/Gas Mark 4. Grease a ramekin or dish.
2. Mix the dry oat ingredients.
3. With a hand blender or regular blender blitz the 3 of the dates with the applesauce and 1 TBSP of the milk. Once its smooth add to the oats, add the vanilla and then the milk bit by bit till the oats are wet but not sloppy. Chop up the last date and mix in. Pour into your dish and bake for 17-20 minutes or until firm and lightly golden.
4. Beat the cream cheese down to smooth, add the sweetener and vanilla and whip again till smooth. Spread on top of your oatmeal, top with a walnut and enjoy!
