Orange and Date Pound Cake Baked Oatmeal

I actually lost my recipe for this one. Luckily, it had been requested on Instagram and I had posted it in the comments. So here it is.
 
Are the instructions long winded? Yes. Is it worth it? Most defiantly!
 
I'm I being hella bias? Probably. :P

Orange and Date Pound Cake Baked Oatmeal

Ingredients:

1/2 Cup/45g Rolled Oats
1/8 Tsp Baking Soda
Pinch of Salt
1 Orange
1-2 TBSP Desiccated Coconut
Handful of toasted Pecans
4 Gooey Medjool dates, pitted and roughly chopped

Method:

1. Preheat the oven to 350F/180C/Gas Mark 4. Grease a ramekin or dish.
2. Zest the orange. Put 1/2 Tsp each into two bowls. Add the milk to a glass with 1/4 Tsp of the juice and set aside for 10 minutes to curdle.
3. Add the juice of 1/2 the orange in with one lot of zest and set aside.
4. Blitz 1 1/2 TBSP of the Oats to a flour in a blender. Pour the rest of the oats into a bowl, add the salt and baking soda and mix it all till well combined.
5. Mix the oat flour with the dry lot of zest and add 1-2 TBSP of coconut (Depending on personal preference of coconut), the pecans, and the dates. Mix up so everything is coated, separating the dates as much as possible. (This will help distribute everything in the oatmeal and stop the dates from clumping together).
6. Add both oat mixes together, and add the curdled milk mix to form a regular baked oatmeal batter (Wet but not sloppy) Add sweetener to taste and pour into your dish. Bake for 17-20 minutes or till firm.
7. Invert onto a plate. Prick holes in the top with a toothpick and pour on the zest/juice mix, letting it soak in. Top with a toasted pecan. Enjoy!
